1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup dried cranberries

1/2 cup shelled pistachios, chopped

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup white chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-5 minutes using a hand mixer.

      Add in the egg and vanilla extract, mixing until fully incorporated.

        In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

          Gently fold in the dried cranberries, chopped pistachios, and white chocolate chips (if using).

            Using a cookie scoop or spoon, drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.

              Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers might look slightly soft; they'll firm up as they cool.

                Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
