Ingredients

For the Honey BBQ Chicken:

4 boneless, skinless chicken breasts

1/2 cup honey

1/2 cup BBQ sauce (choose your favorite)

2 tablespoons soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

For the Creamy Garlic Parmesan Potatoes:

1.5 pounds baby Yukon gold potatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

2 tablespoons butter

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Chopped chives for garnish (optional)

Instructions

Marinate the Chicken: In a large bowl, whisk together honey, BBQ sauce, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

Prepare the Potatoes: While the chicken is marinating, preheat your oven to 400°F (200°C). Place the halved potatoes in a large pot of salted water and bring to a boil. Cook for about 10-15 minutes until fork-tender, then drain.

Make the Creamy Sauce: In a skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese, Italian herbs, salt, and pepper. Mix well until the sauce is creamy and smooth.

Combine Potatoes and Sauce: Add the drained potatoes to the skillet and gently fold them into the creamy garlic Parmesan sauce. Ensure they are well-coated and then transfer the mixture to a greased baking dish.

Bake the Potatoes: Place the baking dish in the preheated oven and bake for about 25-30 minutes, until the top is golden and bubbly.

Cook the Chicken: While the potatoes are baking, preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade (discarding excess marinade) and grill or cook in the skillet for about 6-7 minutes on each side, or until the chicken is cooked through and internal temperature reaches 165°F (75°C).

Serve: Once both the chicken and potatoes are ready, plate the honey BBQ chicken beside a generous serving of creamy garlic Parmesan potatoes. Garnish the chicken with fresh parsley and the potatoes with chopped chives if desired.
