4 medium sweet potatoes

1 pound ground turkey

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

1 cup black beans (rinsed and drained)

1 cup corn (frozen or canned)

1/2 cup shredded cheese (cheddar or Monterey Jack)

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (for topping, optional)

Lime wedges (for serving, optional)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prep the sweet potatoes: Rinse the sweet potatoes under running water and pat them dry. Pierce each potato 2-3 times with a fork to allow steam to escape. Place them on a baking sheet and drizzle with olive oil. Bake in the preheated oven for 45 minutes to 1 hour, or until soft.

      Cook the turkey mixture: While the sweet potatoes are baking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add in the minced garlic and diced bell pepper, cooking for another 2-3 minutes.

        Add the ground turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a spatula, until browned and no longer pink, about 5-7 minutes.

          Season the filling: Stir in the cumin, smoked paprika, chili powder, salt, and pepper to taste. Add the black beans and corn, mixing well. Cook for an additional 2-3 minutes until everything is heated through.

            Check the sweet potatoes: Once the sweet potatoes are done baking, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out a small portion of the flesh to create space for the filling.

              Stuff the sweet potatoes: Fill each sweet potato half generously with the turkey mixture. Top with shredded cheese and return them to the oven for another 10-15 minutes, or until the cheese is melted and bubbly.

                Serve: Once out of the oven, garnish with fresh cilantro and slices of avocado if desired. Serve with lime wedges on the side to brighten the flavors.
