1 lb lean ground turkey or chicken

1 cup cooked quinoa

1 cup chopped kale or spinach

1 cup diced tomatoes

1/2 cup diced cucumbers

1/4 cup red onion, finely chopped

1/4 cup shredded carrots

1/4 cup low-fat Greek yogurt

2 tablespoons Dijon mustard

1 tablespoon olive oil

2 tablespoons balsamic vinegar

1 teaspoon smoked paprika

Salt and pepper to taste

Cook the Base: In a medium pot, bring water to a boil. Add quinoa and a pinch of salt. Reduce heat, cover, and simmer for 15 minutes or until the quinoa is fluffy. Set aside.
