1 lb chicken breast, cut into 1-inch cubes

1 cup pineapple chunks (fresh or canned)

1 bell pepper (red or yellow), cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon honey

2 tablespoons pineapple juice

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

1 tablespoon sesame oil

Salt and pepper to taste

Skewers (soaked in water if wooden)

Instructions
 

Marinate the Chicken: In a bowl, whisk together soy sauce, brown sugar, honey, pineapple juice, ginger, garlic, and sesame oil. Add the chicken cubes to the marinade and stir to coat. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Preheat the Grill: Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.

      Assemble the Skewers: Thread the marinated chicken cubes onto skewers, alternating with pineapple chunks, bell pepper pieces, and red onion. Leave a bit of space between each piece for even cooking.

        Grill the Skewers: Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Remove from the grill and let rest for a few minutes. Serve warm with a drizzle of extra marinade sauce (boiled to eliminate bacteria) and garnish with fresh cilantro or green onions, if desired.
