2 cups fine semolina

1 cup warm milk (or water)

1/4 cup olive oil (plus extra for frying)

1/4 cup sugar

1 tsp salt

1 tsp baking powder

1 tsp ground cinnamon (optional, for flavor)

Sesame seeds (for garnish, optional)

Instructions
 

In a large mixing bowl, combine the fine semolina, sugar, salt, baking powder, and ground cinnamon (if using). Mix well to ensure the dry ingredients are fully incorporated.

    Create a well in the center of the dry ingredients and pour in the warm milk and olive oil. Mix with your hands or a wooden spoon until a dough forms.

      Knead the dough gently in the bowl for about 2-3 minutes until it becomes smooth and slightly tacky. If the dough is too dry, add a little more warm milk; if too wet, sprinkle in a bit more semolina.

        Divide the dough into equal portions (about 6-8), rolling them into balls. Flatten each ball into a circular disc, about 1/2 inch thick. You can lightly dust with semolina to prevent sticking.

          Heat a non-stick skillet or griddle over medium-low heat and brush with a little olive oil. Fry each harcha for about 5-7 minutes on one side until golden brown. Flip and cook the other side for an additional 5-7 minutes. You can press down gently with a spatula to ensure even cooking.

            Remove from the pan and let cool slightly on a wire rack. Optionally, sprinkle sesame seeds on top for added texture and flavor.

              Serve warm with honey, jam, or cheese as a delicious accompaniment. Enjoy your freshly made harcha!
