Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 small yellow onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup spinach (fresh or frozen)

1 tsp smoked paprika

1 tsp ground cumin

½ tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Heat the Skillet: In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Onions and Peppers: Add the diced onion and bell pepper, cooking until softened (about 5 minutes). Stir occasionally to prevent burning.

      Cook Sweet Potatoes: Add the diced sweet potatoes to the skillet, season with salt and pepper, and cover. Cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.

        Add Garlic and Spices: Once the sweet potatoes are cooked through, make a well in the center of the skillet, add minced garlic, smoked paprika, cumin, and chili powder. Cook for about 1 minute until fragrant.

          Brown the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through (about 5-7 minutes). Stir well to combine with other ingredients.

            Stir in Spinach: Add the spinach to the skillet, stirring until wilted (if using fresh) or heated through (if using frozen), about 2 minutes. Adjust seasoning with more salt and pepper if desired.

              Garnish and Serve: Remove from heat, garnish with fresh parsley (if using), and serve warm.
