Ingredients
  

1 lb ground turkey

1 large sweet potato, peeled and diced

1 small onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup chicken broth

2 cups fresh spinach

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes, until softened.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

          Sprinkle in the smoked paprika, cumin, chili powder, salt, and pepper. Stir to combine.

            Add the diced sweet potato to the mixture, then pour in the chicken broth. Bring to a simmer.

              Cover the skillet and let it cook for about 15-20 minutes, or until the sweet potatoes are tender, stirring occasionally.

                Once the sweet potatoes are cooked through, stir in the fresh spinach. Cook for an additional 2-3 minutes until the spinach is wilted.

                  Taste and adjust seasoning if needed. Remove from heat and garnish with fresh cilantro or parsley if desired.
