Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup chopped onions

2 cloves garlic, minced

1 cup bell peppers (red or yellow), diced

1 cup corn kernels (fresh or frozen)

1 cup black beans, drained and rinsed

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1/2 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup chicken broth (low-sodium)

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Turkey: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and bell peppers. Sauté for about 5 minutes until the onions are translucent. Add the minced garlic and cook for an additional minute. Next, add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 8-10 minutes.

      Season the Mixture: Stir in the cumin, smoked paprika, chili powder, salt, and pepper. Mix well to combine, then add the black beans and corn. Pour in the chicken broth and stir until everything is evenly distributed.

        Prepare Sweet Potatoes: While the turkey mixture is cooking, steam or boil the diced sweet potatoes for about 10-12 minutes until just tender but not mushy. Drain and set aside.
