Ground Turkey and Peppers

Ingredients
  

1 lb ground turkey

2 medium bell peppers (any color), diced

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes (with juices)

2 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro for garnish (optional)

Lime wedges (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onions and garlic, and sauté until the onions are translucent, about 3-4 minutes.

    Add the ground turkey to the skillet. Use a spatula or wooden spoon to break it apart, cooking until it is browned and cooked through, about 6-8 minutes.

      Stir in the diced bell peppers, cooking for an additional 2-3 minutes until they become somewhat tender.

        Add the black beans, diced tomatoes (with their juices), chili powder, cumin, smoked paprika, and salt & pepper. Stir well to combine all the ingredients.

          Reduce the heat to low, cover the skillet, and let it simmer for about 10-15 minutes, allowing the flavors to meld together.

            Taste and adjust seasoning if necessary.

              Serve in bowls, garnished with fresh cilantro and lime wedges on the side for added freshness.
