1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Juice of 1 lime

For the Corn Salsa:

1 cup corn (fresh, frozen, or grilled)

1/2 red onion, finely diced

1 red bell pepper, diced

1/4 cup cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

For Assembly:

2 cups cooked brown rice or quinoa

1 ripe avocado, sliced

Lime wedges for serving

Fresh cilantro leaves for garnish

Prepare the Grilled Shrimp: In a bowl, combine the olive oil, minced garlic, smoked paprika, cayenne pepper (if using), salt, pepper, and lime juice. Add the shrimp and toss to coat. Let marinate for 15-30 minutes.

    Make the Corn Salsa: In a medium bowl, mix together the corn, red onion, red bell pepper, chopped cilantro, lime juice, salt, and pepper. Set aside to let the flavors meld.
