Marinated in buttermilk for extra tenderness and coated in a flavorful mixture of flour and cornmeal, these bite-sized nuggets are grilled to perfection for a crispy finish. 1 lb chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (optional for heat)

1 tsp salt

1/2 tsp black pepper

Olive oil spray

Fresh herbs (like parsley or cilantro) for garnish

Marinate the Chicken: In a bowl, combine the cut chicken breast pieces with buttermilk. Cover and refrigerate for at least 1 hour (or up to overnight) to tenderize the chicken.

    Prepare the Coating: In another bowl, mix together the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.

      Coat the Nuggets: Remove the marinated chicken from the refrigerator. Take each piece out and let excess buttermilk drip off, then dredge it in the flour coating mixture, ensuring each nugget is fully coated. Shake off any excess flour.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, allow it to heat up on the stovetop.

          Grill the Nuggets: Lightly spray the grill with olive oil. Place the coated nuggets on the grill and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through, with an internal temperature of 165°F (75°C).

            Serve: Once cooked, remove the grilled nuggets from the grill and let them rest for a couple of minutes. Garnish with freshly chopped herbs before serving. Enjoy with your favorite dipping sauces!
