Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

Ingredients
  

2 boneless, skinless chicken breasts

2 cups broccoli florets

1 cup quinoa (or brown rice)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup Greek yogurt

2 tablespoons mayonnaise

2-3 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, mix together 2 tablespoons of olive oil, garlic powder, paprika, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Let it sit for at least 30 minutes or up to 2 hours in the refrigerator.

    Cook the Grains: Rinse the quinoa under cold water. In a saucepan, combine quinoa (or brown rice) with 2 cups of water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, until the water is absorbed and the quinoa is fluffy. Fluff with a fork and set aside.

      Prepare the Broccoli: Steam the broccoli florets until vibrant green and tender, about 5-6 minutes. You can do this in a steamer basket or by microwaving them with a splash of water covered for about 3-4 minutes. Drain and set aside.

        Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nice and charred. Remove from heat and let it rest for a few minutes before slicing.

          Make the Creamy Garlic Sauce: In a small bowl, combine Greek yogurt, mayonnaise, minced garlic, lemon juice, and a pinch of salt. Mix until smooth and creamy. Adjust the seasoning to taste.

            Assemble the Bowls: In serving bowls, layer the cooked quinoa as the base, followed by the steamed broccoli and sliced grilled chicken on top.

              Drizzle and Garnish: Generously drizzle the creamy garlic sauce over the chicken and broccoli. Finish with a sprinkle of fresh parsley.
