Greek Style Loaded Hummus

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil

Juice of 1 lemon

2 garlic cloves, minced

1/2 teaspoon ground cumin

Salt and pepper to taste

1/4 cup Greek yogurt

1/2 cup cherry tomatoes, halved

1/4 cup cucumber, diced

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped

Pita chips or fresh pita for serving

Instructions
 

In a food processor, combine chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, salt, and pepper. Blend until smooth, scraping down the sides as needed. If the hummus is too thick, add a tablespoon of water at a time until you reach your desired consistency.

    Transfer the hummus to a serving bowl and create a shallow well in the center.

      Spoon the Greek yogurt into the well you created in the hummus.

        Carefully arrange the cherry tomatoes, cucumber, Kalamata olives, and feta cheese around the yogurt on top of the hummus.

          Drizzle a touch of olive oil over the top and sprinkle with fresh parsley for garnish.

            Serve immediately with pita chips or fresh pita bread for dipping, or refrigerate the hummus until ready to serve.
