Ingredients
  

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tbsp garam masala

2 tsp ground cumin

2 tsp ground coriander

1 tsp turmeric powder

1 tsp cayenne pepper

4 cloves garlic, minced

1-inch ginger, grated

Juice of 1 lemon

2 tbsp vegetable oil

1 large onion, finely chopped

1 can (14 oz) crushed tomatoes

1 cup heavy cream

Salt, to taste

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Marinate the Chicken:

    In a bowl, combine the yogurt, garam masala, cumin, coriander, turmeric, cayenne, 2 garlic cloves, ginger, and lemon juice. Add the chicken pieces, mixing well to coat. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

      Cook the Chicken:

        Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken pieces (shaking off excess marinade) and cook for about 5-7 minutes, until they are browned and cooked through. Remove the chicken and set it aside.

          Make the Sauce:

            In the same skillet, add the chopped onion and cook for about 5-6 minutes until softened and golden. Stir in the remaining minced garlic and cook for another minute until fragrant.

              Combine Ingredients:

                Add the crushed tomatoes to the skillet and bring to a gentle simmer. Cook for about 10 minutes, allowing the flavors to develop.

                  Finish with Cream:

                    Stir in the heavy cream and return the cooked chicken to the skillet. Season with salt to taste. Simmer for an additional 5 minutes, allowing the sauce to thicken slightly.

                      Garnish and Serve:

                        Remove from heat and garnish with fresh cilantro. Serve hot with cooked basmati rice or warm naan.
