12 oz spaghetti or fettuccine

4 tablespoons olive oil

6 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 cup spinach leaves, roughly chopped

Salt and freshly ground black pepper to taste

Fresh parsley or basil, chopped (for garnish)

Extra grated Parmesan for serving

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the rest and set the pasta aside.
