Garlic Parmesan Chicken Skewers

Ingredients
  

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper, to taste

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

In a large mixing bowl, combine olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper. Whisk well to create a marinade.

    Add the chicken cubes to the bowl, making sure they're evenly coated with the marinade. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

      Preheat your grill or grill pan over medium-high heat. If using a grill, brush the grates lightly with oil to prevent sticking.

        Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

          Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            During the last few minutes of grilling, sprinkle the grated Parmesan cheese over the skewers so it melts slightly onto the chicken.

              Once cooked, remove the skewers from the grill and let rest for a couple of minutes.
