Ingredients

For the Garlic Parmesan Beef Chops:

4 beef chops (about 1 inch thick)

4 cloves of garlic, minced

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

1 lemon, juiced

For the Cheesy Scalloped Potatoes:

4 large russet potatoes, thinly sliced

1 cup heavy cream

1 cup milk

2 cups shredded cheddar cheese

1 cup grated Parmesan cheese

1 tablespoon unsalted butter

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

Instructions

Prepare the Beef Chops:

    - In a small mixing bowl, combine minced garlic, Parmesan cheese, olive oil, rosemary, thyme, lemon juice, salt, and pepper to create a marinade.

      - Pat the beef chops dry with paper towels and rub the marinade generously over both sides of the chops. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to enhance the flavors.

        Preheat the Oven:

          - Preheat your oven to 375°F (190°C).

            Make the Cheesy Scalloped Potatoes:

              - In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).

                - Pour in the heavy cream and milk, then stir in salt, black pepper, and paprika. Bring the mixture to a simmer.

                  - In a greased baking dish, layer half of the sliced potatoes, followed by half of the cream mixture, and half of the cheddar and Parmesan cheese. Repeat with the remaining potatoes, cream, and cheese.

                    - Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                      Cook the Beef Chops:

                        - While the potatoes are baking, heat a grill pan or skillet over medium-high heat.

                          - Once hot, add the marinated beef chops and sear for 4-5 minutes on each side until cooked to your desired doneness (medium-rare to medium is recommended).

                            - Once cooked, let the chops rest for a few minutes before slicing.

                              Finish the Scalloped Potatoes:

                                - After 30 minutes, remove the foil from the scalloped potatoes, and bake for an additional 15-20 minutes until the top is golden and bubbly.

                                  - Let the potatoes cool slightly before serving.

                                    Serve:

                                      - Plate the Garlic Parmesan Beef Chops alongside a generous portion of Cheesy Scalloped Potatoes. Garnish with fresh herbs if desired.
