Garlic Mushroom Toast

8 oz (225g) of cremini or button mushrooms, sliced

4 tablespoons of unsalted butter

3 cloves of garlic, minced

1 teaspoon of fresh thyme leaves (or 1/2 tsp dried thyme)

1 tablespoon of soy sauce

Salt and black pepper, to taste

1 teaspoon of lemon juice

4 slices of rustic bread (like sourdough or ciabatta)

1/4 cup of grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Sauté the Mushrooms: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until they are golden and tender, stirring occasionally.

    Add Garlic and Thyme: Reduce heat to low, then stir in the minced garlic and thyme. Cook for an additional 1-2 minutes until fragrant, being careful not to burn the garlic.

      Season the Mixture: Stir in the soy sauce, salt, pepper, and lemon juice. Allow the mixture to simmer for another minute to meld the flavors together. Remove from heat.

        Prepare the Toasts: While the mushroom mixture cools slightly, toast the bread slices until golden brown. You can choose to grill them, use a toaster, or bake them in the oven for a crispier texture.

          Assemble the Toasts: Spread the remaining 2 tablespoons of butter evenly on one side of each toasted slice. Spoon the sautéed mushroom mixture over the buttered side of each toast.
