1 lb baby potatoes, halved

2 medium carrots, sliced into rounds

2 medium zucchinis, chopped into bite-sized pieces

4 cloves garlic, minced

3 tablespoons olive oil

2 teaspoons dried Italian herbs (such as oregano, basil, and thyme)

Salt, to taste

Pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved baby potatoes, sliced carrots, and chopped zucchini.

      Add the minced garlic, olive oil, dried Italian herbs, salt, and pepper to the bowl. Toss everything together until the vegetables are well coated with the oil and seasoning.
