Garlic Butter Steak Bites and Potatoes

Ingredients
  

1 lb steak (sirloin or ribeye), cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh rosemary, chopped

Salt & pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.

    Season the Steak: While the potatoes are cooking, season the steak cubes with salt and pepper.

      Sear the Steak: In a large skillet over medium-high heat, add olive oil. Once hot, add the steak cubes in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side until desired doneness is reached. Remove the steak from the skillet and set aside.

        Prepare the Garlic Butter: In the same skillet, lower the heat to medium. Add butter and let it melt. Add minced garlic and rosemary, sautéing for about 1-2 minutes until fragrant (do not let it burn).

          Combine Ingredients: Return the steak bites to the skillet and toss gently with the garlic butter mixture. Add the cooked potatoes to the skillet and stir to combine everything, allowing the flavors to meld for another 2-3 minutes.
