Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped for garnish (optional)

Instructions
 

Prepare the Potatoes: In a pot, cover the halved baby potatoes with water and a pinch of salt. Bring to a boil and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak Bites: While the potatoes are cooking, heat a large skillet over medium-high heat and add the olive oil. Once hot, add the steak bites in a single layer, ensuring not to overcrowd the pan. Season with salt and pepper. Sear for about 2-3 minutes on each side until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Cook the Garlic and Potatoes: In the same skillet, lower the heat to medium. Add 2 tablespoons of the butter and the cooked potatoes. Toss the potatoes in the skillet and let them brown slightly for about 5 minutes. Add the minced garlic, thyme, and rosemary, and cook for an additional 1-2 minutes until garlic is fragrant.

        Combine Ingredients: Return the cooked steak bites to the skillet with the potatoes. Add the remaining 2 tablespoons of butter and toss everything together quickly to melt the butter and coat the steak and potatoes well. Adjust seasoning with salt and pepper to taste.
