1 pound sirloin steak, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak bites with salt and pepper. Once the oil is hot, add the steak in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until browned. Remove the steak bites from the skillet and set aside.
