1 lb (450g) sirloin steak, cut into 1-inch cubes

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Optional: Chopped parsley for garnish

Instructions
 

Prepare Potatoes: In a large skillet, add baby potatoes and cover them with water. Bring to a boil and cook for about 10-15 minutes or until fork-tender. Drain and set aside.

    Sear Steak: Season the steak cubes with salt and pepper. In the same skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steak cubes in a single layer (do this in batches if necessary) and sear for about 3-4 minutes, until browned on all sides. Remove the steak from the skillet and set aside.

      Cook Potatoes: In the same skillet, reduce the heat to medium and add 2 tablespoons of butter. Add the boiled potatoes, cut-side down, and cook for about 5-7 minutes until golden brown and crispy. Flip the potatoes and cook for an additional 5 minutes.

        Add Garlic and Herbs: Add the minced garlic, rosemary, and thyme to the potatoes. Sauté for another 2-3 minutes until the garlic is fragrant.

          Combine Everything: Return the steak cubes to the skillet. Add the remaining 2 tablespoons of butter and toss everything together so the steak and potatoes are coated in the buttery, garlicky sauce. Cook for another 1-2 minutes just to heat the steak through.

            Serve: Check for seasoning, adjusting salt and pepper to taste. Garnish with chopped parsley if desired, and serve immediately.
