Garlic Butter Shrimp and Sausage Skillet Pasta

Ingredients
  

8 oz. spaghetti or linguine

1 lb. large shrimp, peeled and deveined

8 oz. smoked sausage, sliced into rounds

4 tbsp unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 tsp red pepper flakes (optional)

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Zest and juice of 1 lemon

Grated Parmesan cheese for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or linguine according to the package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced smoked sausage and cook for about 4-5 minutes until golden brown. Remove and set aside.

      Prepare the Shrimp: In the same skillet, add another 2 tablespoons of butter. Add the minced garlic and red pepper flakes (if using), and sauté for about 30 seconds until fragrant. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque.

        Combine Ingredients: Add the halved cherry tomatoes and spinach to the skillet. Cook for about 2 minutes until the spinach wilts, then return the sausage to the skillet.

          Mix with Pasta: Add the cooked pasta to the skillet. Pour in the lemon juice and zest, and toss everything together gently. Season with salt and pepper to taste.

            Serve: Remove from heat, sprinkle with fresh parsley, and serve hot, topped with grated Parmesan cheese.
