Ingredients
  

1 cup water

1/2 cup unsalted butter

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Oil for frying

Instructions
 

In a medium saucepan, bring the water, butter, and salt to a boil over medium heat.

    Once boiling, add the flour all at once, stirring vigorously with a wooden spoon until the mixture pulls away from the sides and forms a ball.

      Remove the saucepan from the heat and allow the dough to cool for about 5 minutes.

        Add the eggs one at a time, fully incorporating each egg before adding the next. The dough will become smooth and glossy.

          Stir in the vanilla and almond extracts until well combined.

            Transfer the dough to a piping bag fitted with a star tip.

              Heat oil in a deep fryer or a large pot to 350°F (175°C).

                Pipe 3-inch rings of dough into the hot oil, carefully cutting the dough with scissors to ensure it releases into the oil.

                  Fry the crullers for about 2-3 minutes on each side or until golden brown and puffed.

                    Remove from the oil and place on paper towels to drain excess oil.

                      In a small bowl, whisk together the powdered sugar and milk until smooth to create the glaze.

                        Dip the warm crullers into the glaze, ensuring they are fully coated, and allow them to set on a wire rack.
