Ingredients

2 boneless, skinless chicken breasts

2 tablespoons chili garlic sauce

1 tablespoon soy sauce

4 cups chicken broth

2 packs of ramen noodles (discard seasoning packets)

1 cup shiitake mushrooms, sliced

1 cup baby spinach

2 green onions, sliced

2 eggs

1 tablespoon vegetable oil

Salt and pepper to taste

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons roasted garlic, minced

1 tablespoon lemon juice

1 teaspoon paprika

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, combine the chili garlic sauce, soy sauce, salt, and pepper. Add the chicken breasts, coat well, and let marinate for at least 30 minutes.

Prepare the Creamy Garlic Sauce: In a separate bowl, whisk together the mayonnaise, roasted garlic, lemon juice, paprika, salt, and pepper. Set aside in the refrigerator to allow the flavors to meld.

Cook the Chicken: Heat the vegetable oil in a skillet over medium heat. Remove the chicken from the marinade and cook for 6–8 minutes on each side or until fully cooked and no longer pink inside. Remove from heat and let rest for a few minutes before slicing.

Make the Ramen Base: In a large pot, bring the chicken broth to a boil. Add the sliced shiitake mushrooms and cook for about 3-4 minutes until tender.

Add Noodles: Add the ramen noodles to the boiling broth and cook according to package instructions (usually around 3–4 minutes).

Add Spinach and Final Touches: When the noodles are nearly done, stir in the baby spinach and let it wilt. Adjust seasoning by checking the broth for additional salt and pepper if needed.

Cook the Eggs: In a small pot, boil water and gently add the eggs. Boil for about 6-7 minutes for soft-boiled eggs, then transfer to an ice bath before peeling.

Assemble the Ramen Bowls: Divide the ramen and broth into bowls. Top with sliced chicken, and cut the soft-boiled eggs in half, placing them atop the ramen. Drizzle with the creamy garlic sauce and garnish with sliced green onions.

Serve: Enjoy your blazing hot Fiery Chicken Ramen!
