1 cup fine semolina (farina)

1 cup plain yogurt

1 cup granulated sugar

½ cup melted unsalted butter

1 teaspoon baking powder

½ teaspoon vanilla extract

¼ cup desiccated coconut (optional)

½ cup slivered almonds or blanched almonds for garnish

1 cup water (for the syrup)

1 cup sugar (for the syrup)

1 teaspoon lemon juice (for the syrup)

1 teaspoon rose water (optional, for flavor)

Instructions
 

Prepare the Syrup: In a small saucepan, combine 1 cup of sugar and 1 cup of water. Bring to a boil over medium heat, stirring until the sugar dissolves. Once boiling, add lemon juice, reduce heat and simmer for 10 minutes. Remove from heat and stir in rose water (if using). Let cool.

    Combine Ingredients: In a large mixing bowl, whisk together the semolina, yogurt, sugar, melted butter, baking powder, vanilla extract, and desiccated coconut (if using). Mix until well combined and a thick batter forms.

      Cook on Stovetop: Heat a non-stick skillet over medium heat. Grease the skillet lightly with butter. Pour the batter into the skillet and smooth out the top with a spatula. Cover and cook on low heat for about 20-25 minutes, or until the edges are golden and the center is set.

        Check for Doneness: After 20 minutes, carefully lift the lid and check if the basbousa is cooked through. A toothpick inserted in the center should come out clean.

          Add Syrup: Once cooked, remove the skillet from the heat. While the basbousa is still warm, pour the cooled syrup evenly over the top. Allow it to soak in for about 15 minutes.

            Garnish and Serve: Once the syrup has been absorbed, cut the basbousa into diamond or square shapes. Garnish each piece with a slivered almond on top. Serve warm or at room temperature.
