For the Falafel:

1 cup dried chickpeas (soaked overnight)

1 small onion, chopped

2-3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

Salt and pepper to taste

Oil for frying

For the Pita Sandwich:

4 pita breads

1 cup tahini sauce or hummus

1 cup shredded lettuce

1 large tomato, diced

1 cucumber, thinly sliced

Pickles (optional)

Hot sauce or chili paste (optional)

Instructions
 

Prepare the Falafel Mixture:

    - Drain the soaked chickpeas and place them in a food processor. Add the chopped onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until you get a coarse, dough-like mixture. It should hold together but still have some texture.

      Chill the Mixture:

        - Transfer the falafel mixture to a bowl, cover it, and refrigerate for at least 1 hour. This will help the mixture firm up for frying.

          Form the Falafel Balls:

            - Once chilled, use your hands to form small balls or patties of the falafel mixture, about the size of a golf ball.

              Fry the Falafel:

                - Heat oil in a deep pan over medium heat. Once the oil is hot (around 350°F or 175°C), carefully add the falafel balls, frying them in batches until golden brown and crispy, about 3-4 minutes on each side. Remove them with a slotted spoon and drain on paper towels.

                  Assemble the Pita Sandwich:

                    - Warm the pita breads slightly (you can do this in a toaster or a dry skillet). Spread a generous layer of tahini sauce or hummus inside each pita.
