English Muffin Breakfast Pizza

Just toast English muffins, scramble some eggs with fresh spinach, and load them up with cherry tomatoes, mozzarella, and optional breakfast sausage. Ingredients
  

2 whole English muffins

4 large eggs

½ cup cherry tomatoes, halved

½ cup shredded mozzarella cheese

¼ cup cooked and crumbled breakfast sausage (optional)

¼ cup fresh spinach, roughly chopped

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon dried oregano

2 tablespoons fresh basil, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Slice the English muffins in half and place them cut-side up on the prepared baking sheet.

      In a small skillet, heat the olive oil over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

        In a medium bowl, whisk together the eggs, salt, pepper, and oregano until well combined.

          Pour the egg mixture into the skillet (you can use the same skillet if it’s non-stick) and scramble gently over medium-low heat until just set but still slightly runny.

            Distribute the sautéed spinach evenly over each English muffin half.

              Add the cooked breakfast sausage evenly across the muffins (if using).

                Spoon the scrambled eggs onto each muffin half, then top with halved cherry tomatoes and shredded mozzarella cheese.

                  Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven and let cool for a minute. Garnish with fresh basil and serve warm.
