2 cups basmati rice

1 lb beef or lamb, cut into cubes

3 cups beef or lamb broth

1 large loaf of Egyptian bread (or pita bread), torn into pieces

4 cloves garlic, minced

2 tablespoons vinegar (white or red)

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

Salt and pepper to taste

1/4 cup olive oil

Fresh parsley, chopped (for garnish)

Fried onions (for optional garnish)

Cook the Meat: In a large pot, heat the olive oil over medium heat. Add the meat cubes and brown them on all sides. Stir in the garlic and cook until fragrant, about 1-2 minutes.

    Add Spices and Liquids: Add the cumin, coriander, paprika, salt, and pepper to the pot. Stir to coat the meat in the spices. Pour in the broth and bring to a boil. Reduce the heat to low, cover, and simmer until the meat is tender (about 1.5 - 2 hours for beef, or about 1 hour for lamb).

      Prepare the Rice: In a separate saucepan, rinse the basmati rice under cold water until the water runs clear. Add 3 cups of the broth (from your meat) to the rice, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.

        Fry the Bread: While the meat is cooking, heat a little olive oil in a frying pan over medium heat. Fry pieces of the torn bread until they are golden and crispy. Set them aside to drain on paper towels.

          Prepare the Sauce: In a small bowl, mix together the vinegar and tomato paste. Drizzle this mixture over the cooked meat in the pot, and stir to combine. Adjust seasoning if necessary.
