Ingredients

1 cup unsalted butter, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup finely chopped nuts (walnuts or almonds, optional)

1/4 cup semolina (optional for texture)

Extra powdered sugar for dusting

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.

Cream the Butter and Sugar: In a large mixing bowl, combine the softened butter and powdered sugar. Use an electric mixer to cream them together until the mixture is light and fluffy, about 3-4 minutes.

Add Vanilla: Mix in the vanilla extract until fully incorporated.

Add Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and semolina (if using). Gradually add this dry mixture to the butter and sugar mixture, mixing on low speed until just combined.

Incorporate Nuts: If you're using nuts, fold them into the dough until evenly distributed.

Form the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving space between each cookie. Flatten each ball slightly with the back of a fork or your fingers, creating a nice shape.

Bake the Cookies: Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden. Be careful not to overbake; they should remain pale.

Cool and Dust: Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once cooled, dust generously with powdered sugar.

Serve: Place the cookies on a serving platter and enjoy their delicate flavor and melt-in-your-mouth texture.
