1 lb ground chicken

2 tablespoons sesame oil

2 cloves garlic, minced

1 inch piece ginger, grated

4 cups coleslaw mix (shredded cabbage and carrots)

1/4 cup green onions, sliced

1/4 cup soy sauce (low sodium recommended)

1 tablespoon rice vinegar

1 tablespoon sriracha (adjust for spice level)

1 teaspoon toasted sesame seeds

Salt and pepper to taste

Instructions
 

In a large skillet, heat the sesame oil over medium-high heat.

    Add the ground chicken, breaking it apart with a spatula, and cook until browned and cooked through, about 5-7 minutes.

      Stir in the minced garlic and grated ginger for the last minute of cooking, allowing them to become fragrant.

        Add the coleslaw mix to the skillet, stirring well to combine with the chicken. Cook for about 3-5 minutes, until the cabbage starts to soften.
