12 oz (340 g) penne pasta

2 tbsp olive oil

1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

        Combine Ingredients: Stir in the fresh spinach and allow it to wilt before adding the heavy cream. Bring to a gentle simmer, then fold in the grated Parmesan cheese, stirring until the cheese has melted into the sauce.

          Mix Pasta and Chicken: Add the cooked penne and sautéed chicken back into the skillet. Toss everything together, adding reserved pasta water as needed to reach your desired sauce consistency. Adjust seasoning with salt and pepper if needed.
