Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Ingredients
  

20 large pasta shells

2 cups ricotta cheese

1 cup shredded mozzarella cheese, divided

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp Italian seasoning

1 jar (24 oz) marinara sauce

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process; set aside.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, chopped spinach, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Stuff the Shells: Take a tablespoon of the filling and gently stuff each pasta shell. Place the stuffed shells in a baking dish, opening side up.

          Add Sauce: Pour half of the marinara sauce evenly over the stuffed shells. Cover the shells with the remaining marinara sauce.

            Top with Cheese: Sprinkle the remaining 1/2 cup of mozzarella cheese over the marinara sauce.

              Bake: Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Serve: Garnish with fresh basil leaves if desired. Allow to cool for a few minutes before serving warm.
