Ingredients
  

1 cup granulated sugar

1 cup light corn syrup

1/4 cup water

1/4 teaspoon salt

1 tablespoon vanilla extract

3/4 cup unsweetened cocoa powder

1 package (10 oz) mini marshmallows

2 cups crispy rice cereal

2 cups semi-sweet chocolate chips

2 tablespoons vegetable oil

Instructions
 

Make the Caramel: In a medium saucepan, combine the sugar, corn syrup, water, and salt. Place over medium heat and cook until the sugar dissolves, stirring occasionally.

    Boil: Increase the heat and bring the mixture to a boil. Allow it to boil without stirring until it reaches the soft-ball stage (about 240°F). Remove from heat and stir in the vanilla extract and cocoa powder until smooth.

      Add Marshmallows: Fold in the mini marshmallows until they are fully coated in the chocolate mixture. This will create a gooey consistency.

        Mix in Cereal: Gently fold in the crispy rice cereal until everything is well combined. Be careful not to crush the cereal.

          Prepare the Pan: Line a 9x13 inch baking dish with parchment paper. Pour the mixture into the dish and spread it out evenly. Press down lightly to compact it.

            Cool: Allow the mixture to cool at room temperature for 1 hour, or until set.

              Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring until smooth.

                Coat Scotchmallows: Once the cereal mixture has set, cut it into squares. Dip each square into the melted chocolate to fully coat, allowing excess chocolate to drip off.

                  Chill: Place the chocolate-coated squares on a parchment-lined tray and refrigerate until the chocolate has hardened.
