2 cups granulated sugar

1/2 cup light corn syrup

1/2 cup water

1/4 teaspoon salt

1 teaspoon vanilla extract

1 (7-ounce) jar marshmallow crème

1 cup unsweetened shredded coconut

1 cup semi-sweet chocolate chips

2 tablespoons vegetable oil

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later. Lightly grease with cooking spray.

    Make the Caramel: In a medium saucepan, combine the sugar, corn syrup, water, and salt. Bring to a boil over medium heat, stirring occasionally to dissolve the sugar. Allow it to boil without stirring until it reaches 240°F (115°C) on a candy thermometer (soft ball stage).

      Add the Marshmallow Crème: Remove the saucepan from heat and carefully stir in the vanilla extract and marshmallow crème until smooth.

        Mix in Coconut: Fold in the shredded coconut until evenly distributed throughout the mixture.

          Pour into Pan: Quickly pour the mixture into the prepared baking dish. Use a spatula or your hands (greased) to spread and flatten it evenly. Allow it to cool completely at room temperature for about 1-2 hours.

            Prepare the Chocolate Coating: In a medium microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second increments, stirring well after each until the mixture is smooth and melted.

              Cut and Coat: Once the Scotchmallows have set, lift them out of the pan using the parchment paper overhang. Cut into small squares or triangles. Dip each piece into the melted chocolate, allowing any excess to drip off, and place them on a wire rack or parchment paper to set.
