Ingredients

4 medium-sized red potatoes, diced

1 cup diced bell peppers (red and green)

1 cup diced onion

1 cup cooked breakfast sausage, crumbled (or diced ham)

4 large eggs

1 cup shredded cheddar cheese

Salt and pepper to taste

2 tablespoons olive oil

1 teaspoon paprika

Fresh chives or parsley for garnish

Instructions

Prepare the Potatoes:

    - Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and season with salt, pepper, and paprika.

      - Cook for about 10-12 minutes, stirring occasionally, until the potatoes are tender and crispy on the outside.

        Add Vegetables:

          - In the same skillet, add another tablespoon of olive oil and toss in the diced bell peppers and onion. Sauté until they're tender, about 5 minutes.

            Incorporate Sausage:

              - Add the crumbled breakfast sausage (or diced ham) to the skillet and mix well. Cook for an additional 2-3 minutes until heated through.

                Create Wells for Eggs:

                  - Using a spoon, create 4 wells in the hash mixture. Crack an egg into each well. Season the eggs lightly with salt and pepper.

                    Cover to Cook Eggs:

                      - Cover the skillet with a lid and let the eggs cook for 5-7 minutes, or until the whites are set and the yolks are cooked to your desired doneness.

                        Add Cheese:

                          - Sprinkle the shredded cheddar cheese over the entire hash. Cover again for another 1-2 minutes until the cheese melts.

                            Serve:

                              - Remove from heat, garnish with fresh chives or parsley, and serve hot.
