Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

Ingredients
  

1 pound (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup coconut milk

3 tablespoons soy sauce

2 tablespoons brown sugar

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon ground ginger

1/2 teaspoon red pepper flakes (optional)

8-10 wooden skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey

1-2 teaspoons sriracha (adjust for heat level)

2-4 tablespoons warm water (to thin the sauce if necessary)

Instructions
 

Marinate the Chicken:

    In a large bowl, combine the coconut milk, soy sauce, brown sugar, lime juice, minced garlic, ground ginger, and red pepper flakes if using. Mix well. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours for deeper flavor.

      Make the Peanut Sauce:

        In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and sriracha. If the sauce is too thick, gradually add warm water until desired consistency is reached. Set aside.

          Preheat the Grill:

            Preheat your grill to medium-high heat. If you’re using a grill pan, preheat it on medium heat and lightly grease it.

              Skewer the Chicken:

                Thread the marinated chicken onto the soaked wooden skewers, packing them closely together but not too tightly (about 4-5 pieces per skewer).

                  Grill the Skewers:

                    Place the chicken skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).

                      Serve:

                        Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm with a generous drizzle of peanut sauce on top or on the side for dipping. Garnish with chopped cilantro and lime wedges if desired.
