Ingredients

1 cup rolled oats

2 cups almond milk (or any plant-based milk)

2 medium apples, grated (preferably tart apples like Granny Smith)

1 tablespoon maple syrup (adjust sweetness to taste)

1 teaspoon cinnamon

1/2 cup grated carrots (optional for added nutrition and sweetness)

1/4 cup raisins or dried cranberries

1/4 cup walnuts or almonds, chopped

Fresh fruits for topping (like bananas, blueberries, or strawberries)

A dollop of dairy-free yogurt (optional)

A sprinkle of chia seeds (for added texture and nutrients)

Instructions

In a large mixing bowl, combine the rolled oats and almond milk. Stir and let it soak for about 15-30 minutes to soften the oats.

While the oats are soaking, prepare the grated apples. You can leave the skin on for added nutrition and flavor.

After the oats have softened, stir in the grated apples, maple syrup, cinnamon, and grated carrots if using. Mix well until everything is evenly combined.

Fold in the raisins or dried cranberries and the chopped nuts of your choice. Mix until fully integrated.

Cover the bowl and refrigerate the mixture for at least 1 hour or overnight for a more robust flavor.

When ready to serve, give the muesli a good stir. If it appears too thick, add a splash more of almond milk to loosen it up.

Serve in bowls topped with fresh fruits, a dollop of dairy-free yogurt, and a sprinkle of chia seeds for extra crunch and nutrition.

Enjoy your refreshing and nutritious Easy Grated Apple Bircher Muesli!
