Ingredients
  

4 cups of low-sodium chicken broth

2 large eggs

2 tablespoons cornstarch

2 tablespoons water

1 cup of frozen peas and carrots mix

1 teaspoon ginger, grated

1 tablespoon soy sauce

1 teaspoon sesame oil

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring the chicken broth to a simmer over medium heat.

    In a small bowl, mix the cornstarch and water together until smooth, then stir this mixture into the simmering broth to thicken slightly.

      Add the frozen peas and carrots mix to the broth, stirring well to combine. Let it cook for about 2-3 minutes until heated through.

        Stir in the grated ginger and soy sauce. Taste and adjust seasoning with salt and pepper as needed.

          Crack the eggs into a bowl and whisk them lightly.

            Lower the heat to medium-low, and slowly drizzle the whisked eggs into the soup in a thin stream while continuously stirring with a fork or chopsticks. This will create the characteristic egg ribbons.

              Remove from heat and stir in the sesame oil for a nutty flavor.

                Serve the soup hot, garnished with sliced green onions.
