1 cup Arborio rice (or any short-grain rice)

4 cups whole milk

1 cup water

1/2 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup heavy cream (optional for extra creaminess)

Fresh fruit, raisins, or nuts for topping (optional)

Instructions
 

Rinse the Rice: In a fine-mesh strainer, rinse the Arborio rice under cold water until the water runs clear. This removes excess starch and helps achieve a creamy texture.

    Simmer Rice: In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice absorbs most of the water.

      Add Milk and Sweeten: Once the water is absorbed, slowly stir in the milk, granulated sugar, salt, and cinnamon. Increase the heat to medium, bringing the mixture to a gentle boil.

        Stir Constantly: Reduce the heat to low again and continue to simmer, stirring frequently, for about 20-25 minutes, or until the mixture thickens and the rice is tender. If using heavy cream, stir it in during the last 5 minutes of cooking for added richness.

          Add Flavor: Remove the pan from heat and stir in the vanilla extract.
