2 boneless, skinless chicken breasts

1 cup chipotle ranch dressing (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

1 cup cooked white rice (or cilantro-lime rice)

1 cup black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 medium tomato, diced

½ cup fresh cilantro, chopped

4 large flour tortillas

Marinate the Chicken: In a large bowl, combine the chicken breasts with the chipotle ranch dressing, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Grill the Chicken: Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for 5 minutes before slicing it into strips.
