Easy Caprese Pasta Salad

Bursting with fresh flavors, this dish combines al dente pasta, juicy cherry tomatoes, creamy mozzarella, and fragrant basil, all drizzled with a tangy balsamic dressing. Perfect as a side or main dish, it’s simple to prepare in just 30 minutes. Toss in some toasted pine nuts or walnuts for a delightful crunch. Ingredients
  

8 oz (about 225g) pasta (fusilli or penne work well)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved or diced

1/2 cup fresh basil leaves, torn

1/4 cup olive oil

2 tbsp balsamic vinegar

Salt and pepper, to taste

Optional: 1/4 cup pine nuts or walnuts, toasted

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta down.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, fresh mozzarella, and basil leaves. If using, add the toasted pine nuts or walnuts for an extra crunch.

        Add Dressing: Pour the dressing over the pasta mixture and gently toss to coat all the ingredients evenly.

          Chill and Serve: Let the salad sit for about 15-20 minutes to allow the flavors to meld together. Serve chilled or at room temperature, garnished with additional fresh basil if desired.
