1 can (15 oz) chickpeas, drained and rinsed

1 small onion, diced

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

2 tablespoons ground flaxseed

3 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup breadcrumbs (whole wheat or gluten-free)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a food processor, combine the drained chickpeas, diced onion, minced garlic, parsley, cilantro, ground flaxseed, olive oil, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is well combined but still has some texture.

      Transfer the mixture to a bowl and fold in the breadcrumbs until thoroughly incorporated.

        Use your hands to form the mixture into small, even patties or balls (about 1.5 inches in diameter) and place them on your prepared baking sheet.

          Lightly brush the tops of the patties with additional olive oil for a crispier texture.

            Bake in the preheated oven for 20-25 minutes, flipping the falafel halfway through, until they are golden brown and slightly crisp on the outside.

              Remove from the oven and let cool for a few minutes before serving.
