Ingredients
  

2 large English cucumbers

1 teaspoon salt

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar (or honey)

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds

2 green onions, thinly sliced

1/2 teaspoon red pepper flakes (optional)

Fresh cilantro leaves, for garnish

Instructions
 

Begin by washing the cucumbers thoroughly. Slice them thinly using a knife or mandoline for a uniform thickness.

    Place the sliced cucumbers into a colander, sprinkle with salt, and toss to coat. Allow them to sit for about 10-15 minutes to draw out excess moisture.

      After the cucumbers have drained, rinse them under cool water to remove excess salt, then gently pat dry with a paper towel.

        In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (or honey), minced garlic, grated ginger, and red pepper flakes (if using). Mix until the sugar is dissolved.

          In a large mixing bowl, combine the drained cucumbers with the dressing. Toss them gently to ensure the cucumbers are evenly coated.

            Add the sesame seeds and green onions, and toss again lightly.

              Let the salad sit for at least 10 minutes before serving to allow the flavors to meld together.

                Garnish with fresh cilantro leaves just before serving for an extra burst of flavor and color.
