2 large cucumbers, thinly sliced

1/2 teaspoon salt

1 tablespoon sugar

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1-2 teaspoons chili oil (adjust according to spice preference)

1 tablespoon sesame seeds, toasted

2 green onions, finely sliced

Fresh cilantro leaves for garnish

Instructions
 

Begin by slicing the cucumbers into thin rounds. Place them in a large bowl and sprinkle with salt. Toss gently and let them sit for about 10 minutes to draw out excess moisture.

    In a mixing bowl, combine sugar, rice vinegar, soy sauce, sesame oil, and chili oil. Whisk together until the sugar dissolves completely.

      After 10 minutes, rinse the cucumbers under cold water to remove excess salt, then drain well.

        Add the drained cucumbers to the bowl with the dressing. Toss gently to ensure all slices are evenly coated.

          Sprinkle the toasted sesame seeds and sliced green onions on top. Toss lightly once more to incorporate.

            Garnish with fresh cilantro leaves before serving.

              Chill in the refrigerator for at least 15 minutes to allow flavors to meld. Serve cold as a refreshing side dish.
