Easy Asian Cucumber Salad

2 medium cucumbers, thinly sliced

1 teaspoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar or honey

1 clove garlic, minced

1 teaspoon grated fresh ginger

1 red chili, sliced (optional, for heat)

2 tablespoons chopped fresh cilantro

1 tablespoon sesame seeds

Instructions
 

Start by slicing the cucumbers thinly and placing them in a colander. Sprinkle the salt over the cucumbers and let them sit for about 10 minutes to draw out excess moisture.

    While the cucumbers are resting, in a mixing bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar or honey, minced garlic, and grated ginger until well combined.

      After 10 minutes, rinse the cucumbers under cold water to remove the salt and pat them dry with paper towels.

        In the mixing bowl with the dressing, add the sliced cucumbers and toss well to coat them evenly in the dressing.

          If you enjoy some heat, add the sliced red chili and gently mix again.

            Let the salad sit for 10-15 minutes at room temperature or refrigerate for about 30 minutes to allow the flavors to meld.

              Just before serving, toss in the chopped cilantro and sprinkle sesame seeds on top for added crunch.
