2 cups rolled oats

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1/4 cup brown sugar (optional, for added sweetness)

1/2 teaspoon vanilla extract

1/2 cup mini chocolate chips (optional)

1/4 cup chopped nuts (e.g., almonds, walnuts) or dried fruits (e.g., cranberries, raisins)

Instructions
 

In a large microwave-safe bowl, combine the creamy peanut butter and honey (or maple syrup). Microwave on high for about 30 seconds or until warm and slightly melted. Stir until smooth and well combined.

    Add in the brown sugar (if using) and vanilla extract, mixing until fully incorporated.

      Stir in the rolled oats until they are thoroughly coated with the peanut butter mixture.

        If desired, fold in the mini chocolate chips and any chopped nuts or dried fruits at this stage for added flavor and texture.

          Line an 8x8 inch square baking pan with parchment paper, allowing some overhang for easy removal. Press the granola mixture firmly into the pan using a spatula or the back of a measuring cup to ensure it’s tightly packed.

            Microwave the pressed granola bars on high for 1-2 minutes. Start with 1 minute and check for doneness. You want the edges to be slightly firm but the center still soft.

              Remove from the microwave and let the bars cool in the pan at room temperature for about 30 minutes, then transfer to the refrigerator for an additional 30 minutes to set completely.

                Once set, lift the granola using the parchment overhang and cut into squares or rectangles. Store in an airtight container at room temperature for up to a week or refrigerate for longer shelf life.
