1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup uncooked basmati rice

1 cup chicken broth

1 cup plain Greek yogurt

1 medium cucumber, grated and drained

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

Optional: pita bread for serving

Prepare the Tzatziki Sauce: In a mixing bowl, combine the Greek yogurt, grated cucumber, lemon juice, minced garlic, olive oil, dill, and a pinch of salt and pepper. Mix well and set aside.

    Assemble the Dish: Preheat your oven to 375°F (190°C). In a large baking dish, spread the uncooked basmati rice evenly across the bottom. Pour in the chicken broth over the rice.

      Add Chicken: Place the bite-sized chicken pieces on top of the rice. Sprinkle with salt, pepper, and any additional spices you like (e.g., paprika or oregano) for extra flavor.

        Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes.
