8 oz wide rice noodles

2 tablespoons vegetable oil

3 cloves garlic, minced

1-2 Thai bird's eye chilies, sliced (adjust to taste)

1 small onion, sliced

1 red bell pepper, sliced

1 cup bok choy or Chinese broccoli, chopped

1 cup cooked protein (chicken, shrimp, or tofu)

3 tablespoons dark soy sauce

2 tablespoons oyster sauce (or vegetarian oyster sauce)

1 tablespoon fish sauce (or soy sauce for vegetarian)

1 tablespoon sugar

1 tablespoon fresh basil, chopped (Thai basil preferred)

Juice of 1 lime

Fresh basil leaves for garnish

Optional: crushed peanuts for topping

Prepare the Rice Noodles: Soak the rice noodles in hot water for about 30 minutes until softened. Drain and set aside.

    Cook the Aromatics: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and sliced chilies, and stir-fry for about 30 seconds until fragrant.

      Sauté the Vegetables: Add sliced onion and bell pepper to the skillet. Stir-fry for 2-3 minutes until they start to soften. Then, toss in bok choy and continue to cook for another minute.

        Add the Protein: Include your choice of cooked protein (like chicken, shrimp, or tofu), stirring to combine all the ingredients in the skillet.

          Combine Noodles and Sauces: Add the softened rice noodles to the skillet. Pour in dark soy sauce, oyster sauce, fish sauce, and sugar. Toss everything together, ensuring the noodles are evenly coated with the sauces.

            Finish with Basil and Lime: Remove the skillet from the heat and stir in the fresh basil and lime juice. Adjust seasoning if necessary.
